Today we are going to make Vegetarian eggplant recipe for healthy baked eggplant. Ingredients:
01) Half minced small onion
02) 1 large unpeeled eggplant
03) Half cup of regular mayonnaise
04) 1/3 cups of of fine dry bread crumbs
05) 1/2 cup of nutritional yeast
06) 1/4 teaspoon dried oregano
07) 1/4 teaspoon of heaping dried basil leaf
08) cooking sprat vegetable oil
These were the ingredients of this Vegetarian eggplant recipe for healthy baked eggplant. Now we will see the preparation of this recipe.
Preparation:
In the first step of this recipe we will preheat the oven to 425 degrees
Now we will take a small bowl and then we will combine the minced onion along with mayonnaise. In the next step we will slice off the top and the bottom of the eggplant and then we will slice into rounds.
Now we will take a shallow pan , and then we will combine the breadcrumbs, nutritional yeast or Parmesan, dried oregano and dried basil. Now we will take a baking sheet with vegetable oil spray. Now in the next step of this Vegetarian eggplant recipe for healthy baked eggplant we will dip each slice of eggplant into the mayonnaise mixture, then dredge in breadcrumbs mixture. Now in the next step we will place coated eggplant slice onto baking sheet in a single layer. Now repeat until all slices are coated. Now we will going to use preheated oven bake eggplant slices for 10 to 13 minutes. Now we will flip slices oven and bake an additional 12 minutes and make it golden brown. Now if we are using Parmesan cheese, we will watch closely to prevent burning. Now we will serve it with pasta and chunky tomato sauce. We can top it with additional grated cheese if desired.
