Ingredients:
01) Two lemon
02) 2 tablespoons of olive oil
03) 1 and 1/4 pound of chicken breast (it should be thinly sliced and the breast should also be skinless and boneless)
04) salt according to your own taste
05) Coarsely ground black pepper
06) 2 tablespoons of fresh chopped mint
07) 4 ounces baby watercress

Preparation:
In the first step of this recipe we will heat the ridged grill and will use the medium heat. If we want direct grilling we may prepare outdoor grilling.
Now we will pound the chicken to uniform 1/4 inch thickness.
Now in the next step we will take a large bowl and from lemon, grate 1 tablespoon plus half teaspoon of peel and then squeeze 3 tablespoon juice in that large bowl, whisk lemon peel an juice, oil, mint salt, and pepper until dressing is blended well. Then we will reserve the 1/4 cup of dressing. Now we will take a large bowl and using this bowl we will toss chicken cutlets with remaining of dressing and then we will place the chicken in grill pan and will start cooking for five minutes, until the juices run clear when breast is pierced with knife turning over once.
Now using the remaining dressing we will toss watercress and with top the chicken.Now we will sprinkle with mint (chopped) for garnish.
