A table full of delectable cookies shaped like peach, yes, we are talking about Italian wedding cookies. And today we are going to share with you Italian wedding cookie recipe
This recipe is quite simple and unique. The peach cookies are filled with cream custard held together at the crease by dark chocolate. We may use preserve instead of cream because if we use traditional cream for the filling, the cookies must be made and eaten the same day.
Now let’s see the ingredients.
Ingredients:
01) 1 cup of sugar
02) 1 tablespoon of baking powder
03) 4 eggs (large)
04) 4 cups flour ( the amount of flour can be increased until it will be able to make the balls)
05) 1 cup of vegetable oil
Peach preserves
01) peach brandy
02) Granulated sugar
03) red food coloring
Let’s see the preparation of Italian wedding cookie recipe.
Preparation:
Preheat the oven to 350 degree. Now we will will lightly grease cookie sheets.
Now in the next step we are going to mix sugar with eggs and oil. And after that we will add flour and baking powder in it.
Now in the next step we are going to make the balls and will try to keep the size of balls to 1 inch and also we will make keep it in mind that cookies should be flat on the bottom so they rest on the cookies sheet and will bake these cookies for some time and as result of which they turned into brown color on the bottom. Now while these are still warm we will take a knife with a small pointed and will scoop out a pocket on the flat side of the each cookie.
Now in the next step we will fill the preserves and this is spread over the flat side of the cookie and then we will join the 2 cookies together in order to convert it into a peach.
In the next step we will color the brandy with little food coloring and will also dip the peaches to give them a blush
Now in the next step we are going to roll the peach in granulated sugar and for more good looking presentation we may garnish it with the artificial leaves.
In the end we would like to tell you that if you are going to make the cookies on the actual day when they will be eaten, try to fill the pocket with cream (pastry) and you may use melted chocolate to seal the two halves together!
