Ingredients:
For Kofta:
01) 3  pound of potatoes
02) 4 heaped tablespoons each of crumbled paneer, khoya and malai (thick), we may use baked ricotta cheese and heavy cream as alternative for this.
03) 7 to 8  chopped cashew nut
04) 2 tablespoons of raisins
05) 4 green chillies (finely  chopped)
06) Half tablespoon of sugar
07) 2 tablespoons powder of coriander
08) 2 tablespoons powder of cumin
09) 2 tablespoons powder of  red chili
10) 1 tablespoons powder of cardamon
11) salt (according to your own taste)
12) 5 tablespoons of oil
13)  Oil (in order to fry the kofta)
For gravy:
01) 3 onions chopped one
02) 5 flakes garlic crushed one
03) 2 inch crushed ginger
04) 5 large pureed tomatoes
05) 2 tablespoons of red chili in powder form
06) 1 tablespoons of garam masala powder
07) 1 tablespoons of coriander in powder form
08) 1 tablespoon of cumin powder
09) 3 to  4 tablespoons of poppy seeds
10) 1 tablespoons of sugar
11) 1 tablespoons of peanuts (grounded)
Now let’s see the preparation.

Preparation:
In the first step of the recipe we will boil the potatoes till tender. Now we will peel, mash and add salt to taste. Now we will keep it aside.
In the next step we will mix the ingredients for kofta into a paste.
Now we will make rounds of the potato dough and place  a small amount of prepared mixture in  the mid of each round.
Now we will seal the edges and shapes into round (stuffed).
In the next step we will make deep fry of each kofta and make it golden brown and now we will drain and keep aside.
Now in the next step we will blend together the onions, garlic, ginger and  poppy seeds and make a fry in the oil until  the color will become brown and oil begins to separate. Now we will add pureed tomatoes and masala powders. In the next step we will add sugar and peanuts in grounded form
Now we will see that the gravy will begin to thicken. If we want to make it more thick we will add some malai in it and mix it in water if we think it is necessary.
Now we will see that if the gravy comes to boil, we will add kofta and heat through and malai kofta is ready to be served
What we should keep it in our mind is that we should add kofta before we serve otherwise it will turn soggy.
