06) 3/4 lb of dungeness crab meat
07) 1 teaspoon of cumin
08) 2 ounce of sliced olives
09) 4 ounce of grated tilamook cheese
10) 10 ounce of grated monetery jack cheese
11) 8 ounce can enchilada sauce
12) 1 finely chopped clove garlic
13) Juice of lime
14) 1 dozen corn tortillas
15) Half cup of vegetable oil

Preparation:
Take a skillet and heat the olive oil and keep the heat medium.
Now we will add the ingredients including onions, jalapeños and shallots. We will continue to heat this until the onions become opaque. Now in the next step we will add garlic, lime juice and cumin in it.
Now we will let the mixture cool and then we will stir in half of the Monterey Jack cheese and also Dungeness crab.
Now we will heat enchilada sauce in a skillet and dip the corn tortillas in sauce. We will do this until the sauce becomes soften. Now we will use cutting board and then we will fill the each tortillas with the mixture and then we will roll them up. Now we will place the filled tortillas in a non-stick baking pan tightly and we will keep it side by side.
Now we will evenly pour the enchilada sauce over the tortillas. Then over the top sprinkle the remaining Monterey Jack cheese and the Tillamook cheese. Now we will garnish with the enchiladas with the sliced scallion and with the help of olives.
Now in the end step we will bake it in the preheated oven at 325 degrees of F and it will almost take twenty minutes to be ready to be served.
